Quirky Crackers

Appetizer Recipe to have in your back pocket, metaphorically speaking.

Since I had/have to have an appetizer for a ladies event, I thought I would go ahead and share the recipe. It’s a hard one to sell people on, but ever since I sampled it at a pig roast in a back yard in Detroit (I think it’s a Kentucky thing) years ago, I have loved it. In fact, the idea has made it’s way into more than one snack or grilled cheese over the years.

SOUTHERN GUEST CRACKERS AND CHEESE

  1. With a hand or stand mixer, blend 3 ounces softened (room temp) neufchatel or cream cheese until fluffy.
  2. Add 2 cups grated, extra sharp cheddar, 1 cup grated Jack cheese, 1 tablespoon grated onion, 1 clove pressed garlic, 1 3-4 ounce jar drained, diced pimientos (found in just about any grocery store, at least down here), and pepper to taste. Taste for salt and mayo, as well as lemon juice or Worcestershire (if needed).
  3. Put in a nice bowl, cover, and set aside in the fridge. Serve pimiento cheese (which is what you just made) with woven wheat or your favorite plain cracker and a bowl of natural strawberry jam. It is imperative that both the cheese and jam make it on all the crackers, together!
